Executive Director of Food u0026 Beverage Full-time

Assists with overall direction, financial performance, development, and operations of the Food and Beverage Department with the ultimate objective of providing maximum profit and return on investment while creating an attractive environment and outstanding guest service.Duties and Responsibilities (specific areas of responsibility include but are not limited to): Enforces performance standards, policies, and procedures in accordance with the Gaming Enterprise Division (GED) expectations.Monitors the operation of all food outlets to ensure compliance with all applicable laws, rules, regulations, policies, procedures, and standards.Maximizes cost effectiveness within the outlets by ensuring compliance with established budget, labor, and revenue benchmarks.Ensures venue floor operations are run in a smooth, efficient manner to ensure guest satisfaction.Reviews and approves recommendations and suggestions related to such areas as recruitment and hiring, employee relations, and performance evaluations to ensure fairness and equity.Oversees areas such as portion controls, menu costing, and cost of goods remain within departmental budgetary guidelines; ensures inventories are consistent and completed in a timely manner.Monitors staffing levels for all outlets and assists outlet managers in making adjustments according to business levels and conditions.Ensures all staff are certified as applicable; oversees maintenance of those records.Performs walk-throughs and visually inspects all dining rooms and kitchens to ensure all areas are secure and in proper condition.Supervises and develops direct reports by mentoring, coaching, and providing performance feedback; works collaboratively with them to design professional development plans that support their continuous learning.Assists with the development of long-term strategic planning regarding food services; ensures delivery is consistent with the GED mission and business strategy.12. Understands financial reports and applies the information in a timely and practical fashion to improve the operation.Receives and resolves guest grievances.14. Implements guest service standards throughout the operation; monitors team members to assure they provide service in accordance with established standards and takes action to correct deficiencies.15. Confers with supervisor concerning operational deficiencies and areas in need of attention.Exhibits excellent team leadership/development and partnering ability while working with department team members and other department staff.Makes presentations to senior management in support or on behalf of the supervisor; makes presentations to team members and vendors, as required.Performs other job related duties as assigned.Knowledge, Skills, and Abilities: Knowledge of profit and loss (PL) statements, income statements, balance sheets, cash flow, basic hospitality accounting, and internal control principles with a good understanding of maximizing revenue and controlling costs.Knowledge of food and beverage operations, including front of house and back of house.Knowledge of food, spirits, and wine products.Knowledge of applicable tribal, federal, state laws, regulations, and policies.Knowledge of applicable GED and departmental policies, standards, and procedures.Demonstrated forecasting skills.Excellent communication, math and analytical skillsComputer proficiency with Microsoft Office Suite software, especially word-processing and spreadsheet applications.Strong organizational, planning, time management, and interpersonal skills.Skill in providing exceptional service to guests and a desire to provide leadership to position the property to achieve excellence in service and quality.11.

Ability to sit, walk, or stand for extended periods of time, which may include extended periods of time on the GED floor.Minimum Qualifications: Associate degree or certificate in Hotel/Restaurant Management, Culinary Arts, or Management.Ten (10) years experience in progressively expanding experience in food and beverage.Demonstrated ability to lead a food and beverage organization in a large multi outlet hotel, resort, or casino.Demonstrated track record of success with PL, managing upscale restaurants, buffets, catering, operational functions, and other food services within the gaming and hospitality industries.Demonstrated track record of leadership excellence as well as partnering ability.Computer proficiency with Microsoft Office Suite software, especially word processing and spreadsheets.Must either possess all valid and required certifications, such as Alcohol Awareness and ServSafe, or obtain them within six (6) months of hire.Must be able to work any shift, weekends, holidays, and special events, as needed.Must have employment eligibility in the U.S.Must be able to obtain, maintain, and retain a valid gaming license.Preferred Qualifications: Bachelor degree in Hotel/Restaurant Management, Culinary Arts Management, Business, or related field.Bilingual (English/Spanish).
